Canederli con Formaggio is a delicious Italian dish that is similar to dumplings and is typically made with bread, cheese, and eggs. Here’s a simple recipe for you to try:

Ingredients:

250g stale bread, cubed
200ml milk
2 eggs
100g grated cheese (such as Parmesan or Asiago)
50g butter
1 small onion, finely chopped
2-3 tablespoons chopped fresh parsley
Salt and pepper to taste
1 litre of chicken or vegetable broth

Instructions:

In a bowl, soak the cubed stale bread in the milk until it is fully absorbed.

In a separate bowl, beat the eggs and then mix in the grated cheese, chopped parsley, and salt and pepper.

Add the egg and cheese mixture to the soaked bread and mix well.

Using your hands, form the mixture into small balls, about the size of a golf ball.

In a large pot, bring the chicken or vegetable broth to a gentle boil.

Carefully drop the formed balls into the boiling broth and let them cook for about 10-15 minutes, or until they rise to the surface.

In a separate pan, melt the butter and sauté the finely chopped onion until soft and translucent.

Once the canederli are cooked, remove them from the broth with a slotted spoon and place them in a serving dish.

Pour the sautéed onions and butter over the canederli and serve hot.
